I'm game either way. I like to try different beers and I can either pick up a variety locally when we get there or I can split on a keg if there is enough interest.

Had a few requests for recipes so I'll try to do my best:

Cucumbers that look questionable but taste great! :D
Cucumbers
Balsamic Vinegar
Onions (I use sweet onions - usually Vadalia)
A little ranch dressing
A little pepper

It doesn't take much vinegar (I actually used too much, but i've never made a big batch and ran into some logistic issues ;) )
Since cucumbers are mostly water, they will add water to the vinegar so add some vinegar...maybe 1/2 as much as there are cucumbers.
The ranch I don't measure either...add some in.  Or you don't have to do this either.

Mix this up and refrigerate (marinade).  You'll want to give them a stir when you think about it.  Let em go for some hours and stir them.  Add more vinegar if you need.  They should get watered down a little on their own.

This is an old farmer's recipe...white vinegar works.  Not putting in the ranch works.  I've heard some people add a little sugar.  You can look this up online for variations.  My mom used to freeze these also.

Potato Salad
I just started making it this way this summer, so here ya go:
Red Potatoes - cubed  Add Lawry's Garlic Salt to the water and boil the taters until they are still a little firm, but not crunchy.
Boiled Eggs (I used 8 eggs for 5 lbs of potatoes to give you an idea of quantity
Sweet Onion (vadalia) As much as you like
Mayo with Olive Oil
Store Brand Salad Dressing (It's almost like Miracle Whip, but it's a touch on the sweet side)
Lawry's Garlic Salt.

Basically, I add about the same amount of Mayo and salad dressing and mix it.  Start out with a small portion and add until you get the consistency to your liking. You can always add more, but you can't take it back out! If the potatoes get a little mushy, no worries...just don't add as much.  Then I add the Garlic Salt.  You'll have to taste test it until it tastes right.  You'll know it's right when you taste it and say "That's damn good!"  :lol:

If you like your potato salad with mustard...DO NOT add it to this if you are using the garlic salt.  It will be very disappointing!  Learned that the hard way.  Otherwise, leave out the garlic salt completely...add some mustard with the mayo and salad dressing.  Season with salt and pepper.  Again, throw in a little of everything, mix it, and taste until you say "That's damn good!" and you're done!

Fruit Salad:
1 can Peach Pie Filling
1 can chunk pineapple drained
1 can mandrin oranges drained
Sliced Banana
Red and/or Green Grapes for color (halved)
Mix it, stick it in the fridge and let it cool.  Serve it...eat it...process it.  Done!

Rice -
Brown Rice, cooked according to the package.  Added a little salt to the water.
Never had made brown rice before and we felt it needed something, so we threw some Soy Sauce in it that I didn't use in the Chicken Marinade.

I'll have to look for the chicken marinade recipe.  You all can than Pursuit and his wife for that! :)

I'll dig out the chicken recipe.  Off the top of my head I think it was:

1/2 c Soy Sauce
1/2 c water (we only added a little water since the chicken was still frozen)
2 Tablespoons Garlic (I used freeze dried, but I think any will work fresh, minced, etc)
2 1/2 Tablespoons Dried Ginger (fresh will work too he said)
Juice from 1 lime
1 cup Olive Oil (I need to double check that.  I used 1/2 a bottle for both batches and they were double batches, so it's either 1/2 c or 1 c.)
Chicken - chunked into pieces for kabobs (That's the real recipe - we had to improvise at the meet)
In a blender, mix together all ingredients except the olive oil.  Stream in the olive oil while mixing and emulsify.  Poor mixture into a large (1 gallon) ziploc bag.  Add up to 5 lbs of chicken and coat it well.  Refrigerate at least 3-6 hrs...check every so often to shake the bag to recoat the chicken.
Place chicken on skewers and grill
