Coolant temp reads 75 deg on cold engine (ambient temp 62 deg)

Went to start the car this AM, and noticed that the coolant temp is reading 75 F on the cold engine - outside air temp is 62 deg. Ideas?

Car runs between 195 and 210 with no drama otherwise.

could be a temp sensor going bad but temps sound normal otherwise. If you have a point and shoot thermometer, you can aim it at the sensor and see what the actual temp. is. Mine reads exactly what it says on the DIC, hot or cold. You might also just unplug and replug the the wiring at the sensor. could just be a little corrosion.

Keep in mind that air temp can change a lot faster then the temp of something with some mass like an engine block and all the coolant.  Not knowing when you last ran the engine it's hard to say if the engine had cooled down to room temp yet when you went to restart it.

On a good note, if it does turn out to be a bad sensor, they are readily available, cheap, and easy to replace.

I'm with SA it really might just be nothing
Even my Camaro never reads exactly the same as what the ambient temp outside is even in the Morning.  Mine are 10+ degrees off but my motor is 6.2L & 4+ gallons of coolant.
Your have a block and coolant and a hood that retains heat to some degree and it takes hours for all that to equalize unless the temp is really constant all night long like 75 degrees for 12 hours.
Easiest way to tell is keep it in a climate controlled place for 2 days and check to see how close the 2 temps or keep the hood up all night and check in the morning
